I am working in a bar room. I have the electric mostly done. I need to run some cat 6 to tvs. I’m also putting in a home theatre system with some keypads and stuff for different zones that is controlled through network cable. How careful do I have to be with running this stuff next to romex?

Like everything else, you will get lots of opinions on separation distances, shielded vs unshielded cable, etc. it is always better to be safe than be disappointed in performance.

I've had zero issues running CAT6 across romex - lots of runs between 100-150 feet. Shielded would be better if you are worried.
HDMI and romex - I've had issues with that.

Use high quality Cat 6 cable, keep the proper twist on the individual conductor pairs, use well crimped RJ45's.

Many moons ago when I was doing it, we kept the voice and data wires/bundles separated (separate conduits, separate runs) as the ringing voltage on the voice lines could disrupt the Ethernet signals.
We avoided contact with any power wires, but it was OK if our voice/data bundles crossed paths at 90 degrees (but didn't touch) near a Romex or armored cable. We NEVER ran any voice or data wires or bundles parallel to any power wires.

you should keep them separated as much as possible. you can cross them perpendicularly if needing to run over each other

I agree with everyone here. Keep them separated by at least a foot when running parallel to each other and cross at right angles. I've been installing both for decades.

what the others have said, you gotta keep em separated!

The other thing that I like about shielded cat6 is that if you terminate it properly, it's better protected from lightening induction. I've had problems several times with shielded CAT5 and nearby lightening strikes.

NFPA 70, National Electric Code (NEC) Section 800.133(A)(2) requires communications wires and cables shall be separated by at least 50mm (2 INCHES) from conductors of any electrical light, power, Class 1 non-power-limited fire alarm or medium-power network-powered broadband communications circuits. Exceptions are if separate raceways or conduit are used for separating the communications cables/wires from the power conductors.
