I have been Debating if/how about putting a bathroom in my shop. I do not have enough fall to get it to my septic system naturally so I would have to have a pump. A guy I know recently had a pipe bored in and has a little pump in his shop. Anyone have any thoughts, opinions, ideas? The bathroom would be roughly 100’ from my septic.

I've seen this/done this more than a few times.

With a 2" discharge pipe, you'd need a grinder pump. These are not very good, in my opinion. Especially in a shop where dirt, silt, gravel, etc would get in to it. They can't handle stuff like that and will fail fairly soon.

A solids-handling pump with a 4" pipe is much better. A properly designed and installed system like this can easily last 30 years, often more.

With just a shop, there's no need for a duplex (2 pump) system. A single pump is much less $$$ and when it fails, simply don't use it until it is repaired.

A sump pit with 2" sewerage ejector pump should work fine, in 20 years in my basement I have only replaced the float once. Tried and true technology, keep it simple they just work.
