As far as the exact year, it should be on the serial number sticker on the back. If it pre-dates the use of the stickers, then it will be stamped into the metal on the back.
As far as removing the drawers, just remove the little bolt inside the drawers, one on each side for each drawer slide. Then lift the front of the drawer, then pull forward. At this point you need to spread the drawer slides a bit to free the drawer. I would not try to do the full width drawer alone.

my krl 761 has 2 black plastic levers to remove the drawers.they are on the slides and
one has to be pushed up and one has to be pushed down then the drawer will slide out.

you need to read the back of the box. take a picture of the model number and the stickers and we will try and figure it out if the date is not stamped on it. it might say 91 or some form of two digit number on the back.

The boxes pre-date the stickers and the model # and serial number are stamped in the box(s). The first 2 digits of the serial number on both the 791 and 761 is 97, so would this be the year of manuf. (YOM)?
Also note that I fat fingered the key in the first post and listed the upper chest as a 391, it is a 791.

i pealed the large (drawer) sticker off of mine.
the drawers all have some semblance of a "switch" on them to pull them out
of the cabinet...to remove / re-order the rails you can either buy the <over priced>

Correct they do not have sticker and there is not a character after the 791.
The stamping reads:
