I'm getting ready to pour my garage slab and have dug 2-18" deep trenches. 1 for my electric service and the other for future use (CATV, phone, alarm, etc).

What is the usual method for closing up the hole under the building forms so I can backfill and keep the dirt out of my footings?

If it just for wiring, I would stub out some conduit sweeps. If it for plumbing as well, it takes a bit more planning. You will need to sleeve it with somthing. PVC works well 3,4,or 6" depending on what you have planned.

I do have 2 runs of 1.25" PVC laid in the trench and stubbed out. 1 for electrical, 1 for whatever else. No plans for plumbing.
