It's been 2-1/2 weeks since it was all delivered. For the small crew here I'm quite impressed with what they're getting done each day !!

Several, maybe many years ago, I remember hearing/reading about moisture issues with SIPs. Have those issues been sorted out?

Hopefully doing something in the spring.

Any contractors serving my area, or anybody with recommendations, are welcomed to message me

The issues we were made aware of by our builder mostly involved the exterior sheathing on the roof if it wasn't properly ventilated. We are doing a "conventional" truss package on the roof so we don't have to worry about those issues. We will be putting agricultural sturdy rib steel on the roof and are taking the extra step of putting a 1x4 between the roof sheathing and roof steel so there is a little bit of ventilation space between the roof and the tin.
