Based on the diagram, is it possible to add another switch coming off of the wireless access point in the garage?

Yes. Lots of access points have a port that can be used as a passthrough.

Regardless if you want a switch in the garage I would just get a PoE switch for the garage and connect the access point to that.

If the wireless access point in the garage has ethernet ports, you can use it like any other switch. Just run cables from there.

Seeing as how you didnt give us a make and model there is no way to answer that question

But it doesnt make sense to plug a switch into an AP when you can install a switch in the garage.

Guessing OP has a house that may have been prewired and only has one run going to the garage.

The switch only has one ethernet input.

The switch in the office is not full. I have one port going to my computer then another port that is utilized for the security cameras. The third port branches off through the attic, then underground to the detached garage.

Correct I only have one wire going to the garage coming off of the switch located in the office.

I wasnt paying attention when i wrote that. I meant to say install a switch in the garage not the office. I fixed it

I guess my drawing was not accurate according to some of the comments here so basically the switch needs to be installed first in the garage and then have the wireless access point coming off of the switch?
Basically, the picture below just reverse both products.
