Overhead door width RO's can vary depending on how they are trimmed out, and of course, also door height.
But off the shelf basic closet doors are always 6' 8" AFAIK.
If your contractor was that goofy w his RO's, I really wonder about other stuff.
RO's are pretty darn Carp 101 basics.. and, if he didn't know the correct size, DUHHHH.. he should have checked/ found out.
NO excuse.
And the 1" diff in ohead door RO.. If, as Radix asked.. the header is not level, again, contractor major boo boo.
But, if concrete was poured after, and that is what is not level, that's a concrete guy fault.
And don't let him tell you something BS like "We did it for drainage"
Door seating area always should be level/ square w side jambs left to right.
