If the Stainles has a grain similar to the grain in wood you can use a Scotch Brite pad, rub with the grain or visit your local custom stainless fabricator and purchase some buffing wheels.

Use tempered pegboard, it is smooth (not fuzzy like un-tempered) and very rigid, very strong. A used store fixture business will have plenty at a good price.
