In the south we keep ours hooked up to the old, deckless mower so we can use it. Winterizing isn’t much of a concern because we have leaves falling until new ones come in. We just haul of the leaves to the burn pile and start it with all my wife’s Amazon boxes.
I went with Barrina from Amazon. They were cheap, bright, low profile and linkable. They are by no means the best option and if they cut up its to replace them. But they give great light and I did my whole 22x24 (11’ ceilings)shop with a 10-pack.

I didn’t use anything. All my seams land on a stud. I butted your pretty tight, maybe a 1/16” gap. If I put anything it would be something like Alex Flex, but I don’t think it’s necessary. All of my walls are 2x4 studs, R13 insulation, 7/16” OSB, Tyvek house wrap and cap staples.

When I closed in the carport for a shop last year weather proofing is not where I saved money. There may be cheaper options than Tyvek, tape and cap staples but I don’t feel like you get the level of protection. I saved all my money on labor because I work at my place for free.

when I closed my carport in I did 24” OC. When it came time to insulate it I wound up spending just as much on insulation as what I saved on lumber by not doing 16” OC.
I would add some blocking to mount a vise. Don’t want the vise relying on 3/4” plywood alone.
I would also consider attaching the legs to the floor somehow. Maybe L brackets on the inside before you add a shelf.
