I have a separate 20x40 for the dirty stuff - tractors, 3 points, mowers, etc. Similar to what you are proposing - gravel floor but tight enough to limit weather exposure . Even dirty stuff needs love. I have found that having separate quarters is about the only way to keep a clean garage/shop.

Best start is get some reasonable plans including expected finish materials and start getting estimates. Factors obviously will be how nice you want it but also how much you can do yourself. Strangely, when I offered to help on mine the GC wanted 20% more.
