My last house in SoCal was uninsulated. 1970's track home, ZERO insulation. We added insulation to the walls and attic. We noticed a MASSIVE improvement in how comfortable the space stayed. Well worth the money IMHO. Congrats on the new castle by the way.

Looks sharp to me. I like when the tiles are laid in a brick pattern like you've shown. I REALLY like when the tiles are laid at an angle. You could do a border around the perimeter to get the clean finish at the door openings. either way, it should look epic in there once its all buttoned up.
