Update: I ended up purchasing Simkar fixtures from my local lighting supply store. I'm going with 20 bulbs in the 10ft ceiling side and 22 in the lift side, including 4 bulbs for side lights and 2 for undercabinet lighting.

He said he likes to run an extra neutral wire on 'future' stuff - that way in the future I could run 120v out of it if necessay. I'm not sure if it's worth the $25 difference in wire cost to me, however.

This. I have Control4 in my home - you can program such that when you turn a light on, it only goes on 80% intensity. You can tell the difference when looking at the light going from 100% to 80%, but you won't notice a 'lack of light' in the room. I do it on every light that is on my system.
