I just did something similar, and used a drywall router with a board guide clamped to the cabinet. You have to go pretty slow, but it left a clean edge and it fit in the tight space - my full size router would not fit well.

No reason to pull multiple neutrals in the same box or conduit for the separate lights. Regular switches don't touch the neutrals, so strictly speaking you don't need to have the neutral in the switch box, although its still a good idea to run one even if you just cap it off in the back of the box.

Harbor freight polisher works just fine, but the pads it comes with are junk. A drill with an adapter will work OK as a polisher. I would NOT use a grinder. It will be an awful experience and you'll probably ruin your pad and/or your wheels. I've tried it before, its very difficult.

Are you putting any texture on the wall before painting it? I don't think you'll notice the unevenness after texture and paint. I bought and fixed up an older house, and any drywall uneven spots (1/2"+) are not noticeable whatsoever unless its against the floor trim.

The upper tier florescent T8s and T5s are pretty close to the lower tier LEDs as far as efficiency goes. The LEDs might be producing a little more light, bringing their real efficiency up a little bit, but %15-%20 difference in efficiency doesn't surprise me.
