I have had a look at your build just now and I am impressed..
At your stage of the build my first consideration would be light and power.
Mine is a very small shop and has evolved over time, rightly or wrongly so try not to go around in circles in regards to lay out at the end of the day it is what works for your situation.
Some things to consider are:
Storage, lots of it..
Sort what you need and don't, then pass it on. I used to spend hours looking for things.
Access to the go to tools, my preference is that the things you don't use frequently, store them appropriately. I have the basics on my pegboard, easily accessed and easy to see what is not there.
Flexibility, allow room to move in terms of storage and access.
Bare in mind my set up is constantly changing but it works for me.
