You can put what ever you want on the inside of the building, you just have make sure the sheathing lines up with the building framing; if it does not you have a few different options for making it work.

Drywall in the garage is code in my area. We might have been able to put OSB over the drywall for convenience, dunno.Not 100% true.... Drywall provides burn resistance and may be required by either your governing body or your insurance company. That said if you are looking at building/ living in a metal building these may not apply to you.
