Depends on the framing. If u have wood studs u can bore through them and run 12/2 NM-b aka Romex. If metal, i would use EMT or PVC(if u cant bend conduit) conduit. Conduit is more versatile...can u post some pics...also any 240v equipment?

If you don't have the needed skills for Emt, I would run bx (ac90) if you want things on the surface like that or plan to leave it exposed

AC and MC cables both have exactly the same rules for protection against physical damage as Romex.

If you don't have the skills needed for EMT..... Flexible Metal Conduit isn't subject to the same restrictions, and can be run exposed or concealed

5hp 80 gallon, i know ill have to run a bigger wire size for the 240 plugs from the subpanel just not sure what it needs to be, i plan on insulating all the walls and finishing them in white metal so no wires will be exposed

For what it's worth, years of experience wiring then rewiring my 80 x 40 x 16 pole barn

Start with a plan, consider that you will initially WAY OVERSIZE your initial requirements. Consider future high output lighting, compressor, post lift and welder as well as general electrical requirements.

Consider future addition of generator and battery inverter / solar backup.

Don't forget multiple sub panels and junction boxes up along every top of the posts.

Accommodate both 240V and 120V circuits.

Use EMT. Romex is ****. DIY EMT is a long process, but ultimately rewarding.

Don't use anything less than 3/4 EMT and a minimum of 1 inch is better.

Buy a scissors lift on EBay. You are going to be up on the ceiling for a while...

Since its 5HP, it needs to be hardwired.

U said u were going to put in a receptacle for the compressor. U cant do that as the compressor is rated for 5HP. Standard NEMA plugs are rated at 3HP...

For wire u need either #10 THHN in EMT or #8 NM-b....and u need a disconnect at the compressor if its more than 50' from and out of sight of the electrical panel...
