    Walls and Ceiling...should I insulate?

    MDF Garage Cabinets

    They'll make fine cabinents, as mentioned, seal them - paint or poly. MDF machines very nicely, no splinters. No tearouts from routing. It's stable, won't warp You'll have to predrill all holes and I like to countersink then putty the screw holes. Screw AND glue. I like working with the stuff...

    Routing romex through top plates and etc?

    Always go with "Efficiency" - many of us do it this way. when it comes time for paneling/drywall, you can run sheets horizontal and only make the box cutouts on the edges of the sheets instead of trying to locate the cutouts in the middle of a sheet.

    Steel work bench surface - rust free

    Not sure its for "protection" as much as it is for cleaning/appearence. Anyone with stainless appliances knows they show every finger print - cleaning them with something like windex leaves streaks, but the stainless wipes/cleaners seem to leave a uniform film that makes for a nice finish.
