By all means insulate it. You will never regret it. You may regret not doing it. I live in Florida. I used 2" foam board to insulate my shop. Walls and ceiling. It makes a difference.
I have the same pair. Had them for probably 40 years. Also have 2 Blackhawk SJ-2 floor jacks. That company built really high quality tools. It's a shame the Chinese cheap **** put them out of business.
Pictures would help. I have three 10 gallon Worthington tanks in my hotair balloon. All are plumbed together. All can be fueled at the same time. A manifold to connect your tanks together is not very difficult to fabricate.
I did commercial suspended ceilings for 13 years. You will need to find a ceiling contractor supply house. There's a bizzilion different styles. Take one of your tiles and have them match it.
You're only too old if you think you are too old. I've done it several times. As soon as I get proficient at a trade I get bored and move on. It's always worked for me.

We get use to where everything is in our shop. When I moved I first took lots of pictures so that I could set up the new shop in a similiar way. I can't tell you how big of a help it was.
