    I would go for the single larger space, you can always use interior walls or curtains to divide up the space, but when you need a large space only a large space will do.

    Buy or rent a few sections of scaffolding to work off of. Temporary ledger boards will help support the material while you position and fasten it in place. A "C" clamp and rope is a great way to lift the materials up on the scaffolding.
