If that's the case, he really hadn't tried very hard to get them to close. Or he's really going about it wrong. (And forcing them open farther is absolutely the wrong way to get them to close. Now, back to my popcorn...)

I drew up plans to build something similar. Every time I have to move the vise, rotab, super spacer, or one of the big chucks, I revive the plans. Can't see spending real money on it but it does look handy.
If you can't figure out how to position a floor jack so that it pushes against the top and bottom to try to get some movement, you shouldn't even be thinking about "modifying" these or anything else that involves safety! Sell them cheap and take your vehicles to somebody else for repairs!
How straight the bar really doesn't matter. The bottom of the casting may not be perfectly parallel to the top of the table, so you may have to shim it to get the top flat. Also, it doesn't take much to move the table that much. The table on the 17" saw at our makerspace wants to sag in front...
I've come to like retractable ratchet straps. Not perfect for every job but they work great for most. Also the little spring clip that holds the hook in place while I'm fighting on the other side of the trailer is handy
