FYI, when I was light shopping a couple years ago, numerous reviewers complained about poor reliability with the Honeywell lights. I decided to buy the similar Lights of America shop lights, also from Sams. I concur with the other reviewers that these lights are wonderful. 4500 lumens, 40W.
Anyway, my shop is also 30x40, with 14' ceilings. I do lots of woodworking and vehicle work in there, and my eyes aren't getting any younger. I used a similar layout to what you suggested, with 5 lights across, but I hung 8 rows instead of 5. I did not hang lights along the edge over workbenches. I measured 117 fc at waist-height in the middle of the room.

Overall, I think your layout should work well, since you have lower ceilings than I do. I sometimes wish I had more light along the side walls, although I suppose painting the walls white would help that situation (mine are bare wood right now).
I made sure that my lights were positioned so that at least some of them shown down between and to the sides of the overhead doors so that I still get some light when the doors are open. Your layout has all the lights hidden by the doors, which you may regret someday. If I were you, I'd run six rows instead of five so that you could run a row between the doors, one row centered over each car bay, and one row off to the side of each bay so it'll shine beside the vehicle you're working on. You'll never regret adding more lights in your shop.
Another thing I did that I love was to configure just four of the lights (one in each quadrant of the shop) on a separate switch from the other lights. If I just need to run in and get something, I don't need to light the room up bright as day.
