Cut the sheets a quarter inch smaller than the stud bay and use spray foam cans to make them tight. The resulting assembly will be air tight too which is even better than just insulation.

You need to install an engineered beam below the 2x8's at the center point. A decent lumber yard will size the beam for you at no cost. Dont use an everyday home roller. Get a foam roller. If you need a better finish do the roll and tip method (roll out the paint and use the tips of a paintbrush to smooth things out) Search DTM paint (direct to metal) Sherwin and Benjamin both make acceptable ones

I like OSB. Like nadogail said it will give shear strength but I also like being able to hang things anywhere I want.
